Indian Creamy Coconut Black Lentil Bowl

BLACK LENTILS

1 cup Black Beluga Lentils
2 & 1/2 Cups Water
1 Bay Leaf

1/4 Can Coconut Milk
stirred well
1/2 Tbs. Turmeric Powder
Ginger grated
3 Cloves garlic minced

MUSHROOMS ~
Oysters and Maitake
1 Clove Garlic
EVOO
Fresh Thyme off stem
Madeira
Black Truffle Balsamic Glaze for finishing

Rinse and drain the lentils, no need to soak, add to the water and bring to a boil, reduce heat and simmer until tender approximately 15- 20 minutes. During the last five minutes and the water is virtually dissipated, remove the bay leave, add the coconut milk, Turmeric, Ginger, Garlic, Salt. Let the flavors merry on simmer without the beans cooking and getting mushy keep checking them.

Mushrooms
Maitake and Oyster Mushrooms
Saute in large skillet in EVOO, 1 clove garlic, Fresh Thyme, sauté until browned, add a splash of Madeira and reduce. Finish with a splash of Black Truffle Balsamic Glaze so decadent tasting!

DINO KALE~
1 Bunch Dino Kale
EVOO
Garlic
Lemon

Wash and de~stem the Kale and cut into small pieces, Sauté the Kale in very small amount of EVOO garlic, turning frequently, when done which would be a bright green, add a splash of water and cover with lid for a few seconds. Add Squeeze of Lemon and serve.

COCONUT QUINOA

2 Cups Water or Veggie Stock
1 Cup Quinoa rinsed and drained
Malton Salt

Rinse and drain the quinoa. Bring water to boil and stir in quinoa, then reduce the heat to simmer. Cover and cook for approximately 15 minutes, check for doneness, towards end add salt and coconut milk and stir in well.

This was such an amazing combo! Just loved the lentils they are so luxurious tasting. Speaking of travel, this was inspired from a trip many years ago to India, I distinctively remembered the black lentils with Coconut milk as being the most astounding dish I savored on that journey! So tried to replicate this amazing dish. That’s why travel can be so great, to try the cuisine in different countries!

The Truffle Balsamic Glaze is amazing, and again added the flavor to this bowl, the mushrooms are so healing and beneficial especially this flu season that’s spreading around! Mushrooms are packed with healing antioxidants, protein, Vitamin C and iron and a great source of fiber, provide cancer protection and help your immunity!

Quinoa is full of protein and Omegas always so good with Kale combo. Bowls are the best way to get your nutrition in, Just add Protein, Grains, variety of veggies, Added the Bell Pepper with Avocado for more color and beauty for your skin. Sprinkle with Black Sesame seeds which are full of calcium.
