Vegan Baked Potato, Side of Maitake Mushroom, Bell Pepper & Broccoli

photo5 Russet Potatoes  1 Clove Garlic Minced, EVOO, Heido Ho Chia Seed Nut Cheese, 2 tbs Earth Balance Butter, 3 Tbs Rice Milk, salt & top with minced Parsley and Chives

Preheat oven to 425 degrees

Srub potatoes well and stick a nail in each one in the middle and bake for 1 hour

Slice length wise and a little in middle side ways and scoop out inside, Saute garlic in a tiny bit of Olive Oil, add butter, add Rice Milk, and potato and smash with a potato masher.  Add Salt to taste.

Stuff Potatoes with mixture add Heido Ho Cheese Spread, Garnish with Chives and Parsley.  Serve warm.

Vegetable Saute of Maitake Mushroom (2 ) Packages, 1 Yellow Bell Pepper sliced, 1 Baby Broccoli head sliced, 1 Clove Garlic, Madeira,

Saute in Olive Oil and garlic, add Maitake stirring frequently on high until browned, add splash Madeira let evaporate, add Yellow Pepper, cook add Broccoli, stirring frequently add splash of water to steam up and serve on side with potatoes.
