LENTIL SALAD
2 Cups French Lentils
1 Garlic Clove minced
1 Shallot Minced
Herbs: Fresh Parsley, Mint, Oregano minced
Salt/Bay Leaf
1/2 Red Pepper diced
Rinse lentils and bring to boil, add bay leaf, salt and simmer for approximately 20 – 25 minutes. Do not overcook! Drain and set aside.
Add the shallots, garlic, pepper, herbs and toss.
LEMON MUSTARD DRESSING
6 Meyer Lemons
Salt
1/4 Cup Dijon Mustard
EVOO
Lemon Peel
Blend with a whisk.
Fold the dressing into the Lentils.
SALAD
Baby Romaine Lettuces
Black Olives
Pumpkin Seeds
Tomatoes
Beet Kimchee
Kale Sprouts
1/2 Avocado
Lay the lettuce and layer with Lentil salad at top, Kimchee, Sprouts, Black Olives, Pumpkin Seeds. Spread the dressing over and ENJOY!
This is clearing out time, out with the old and in with the new! Spring is almost here, and salads are going to be on my menu everyday. Also, wanted to do something with all those gorgeous lemons on my trees, and thought of this dressing. Surprisingly the dressing didn’t need any sweetness possibly because of the Meyers, lemon peel and salt. And added a little orange from the orange tree.
We have had a lot of rain here in California, we needed it, but it’s beginning to feel like Oregon! So happy to see the sun today. Enjoy this beauty salad, it will make you feel amazing! Raw Living foods will make you feel alive, and you’ll have enough dressing for at least a week.
