2 Hannah Yams
1 Cup Cashews soaked for at least an hour or overnight
1 cup Nutritional Yeast
1 tbs. Turmeric
Black Pepper
1 clove Garlic
1/2 Lemon Juiced
1 Tbs. Dijon Mustard
Water as needed

PASTA:
Trumpet Pasta, called “Campaenelle”, little Bell in Italian. Organic NY Sfogilini brand: Boil and set aside just before you finish sauce. For gluten-free just do gluten-free pasta.
Bake the yams for approximately 40 -45 minutes, check for doneness by slitting down middle. Peel and add to Vitamix blender, add the lemon juice, dijon, and blend, add the drained cashews, water as needed, turmeric, black pepper and Nutritional Yeast. Adjust flavors, these are sweet flavorful yams, white fleshed. The taste is amazing, since they are sweet, you may need to adjust with lemon or more dijon as needed.
Garnish with Truffles. Truffles can be heavy in flavor, so just add a few to get that amazing taste. One of the best whole-foods mac and cheese you’ll ever have! I was never a Sweet Potato fan, like the regular organ ones, now they have these amazing tasting yams, Hannah and the Purple that are beyond heavenly in taste.
