Black Bean Breakfast Potato Burrito

2 Cans Organic Black Beans drained

1 Lg Shallot/or 1/4 Onion finely chopped

4 cloves Garlic minced

1/4 tsp, Cumin and Coriander

1/2 tbs. Chili Powder

Avocado, Salsa and Vegan Cheese if you desire, WW Tortillas or gluten-free

Saute in EVOO, onion and garlic until lightly browned, add spices and blend in the beans, let cook for at least 10 minutes.  Heat Tortilla.

Layer Tortilla with The Cultured Kitchen Cheddar Cheese

Cheese ~~  Beans ~  Potatoes  ~~ Salsa  ~~~ Avocado

Makes for a rich satisfying breakfast, Sundays are the day I make a hearty breakfast for my son.  And he loves anything mexican!  Hope you enjoy this easy satisfying recipe.  You can always opt of the Cheese, but this cheese is the best in Mexican dishes.  You can make your own vegan cheese easily too.
