2 packages Black Thai Noodles or Soba
2 bunches Broccolini
6 Shitake Mushrooms
Mirin

Mirin
1/4 cup Tamari
4 tbs. White Rice Vinegar
1/2 Cup Sesame Oil
Maple syrup just a drop
Red Pepper Flakes
4 large Cloves Garlic minced*
1 large chunk shredded Ginger Root*
*half for dressing and half for sautéing
Have your veggies prepped and ready, the bowl you are serving in, to make it pretty. Mix dressing together and let flavors marry. Bring pot of water to a boil readying for the noodles.
MUSHROOMS
Sauté 1/2 the garlic, ginger in grapeseed oil, add the mushrooms and sear on both sides on high heat, splash with Mirin and brown well. Remove from heat and wash out pan.
VEGGIES
Add more oil to pan and heat with garlic, add the broccolini, peppers, and sauté; add 1/2 the ginger soy sauce, and bring to high heat stirring frequently. (Meantime add the pasta to water and time for 5 minutes.) Add the mushrooms to veggies stirring frequently on low. Drain and add the pasta to veggies, and add the rest of Ginger Sauce to noodles.
Serve with Seared Mirin Tofu. Not pictured here.
This is a great winter meal, or summer meal for that matter, the flavors the heat of the red peppers, and mirin for sweetness to veggies adds a nice spark to the dish. Hope you enjoy!
