Creamy Roasted Veggie Mac and Cheeze

2 cups Roasted Fingerlings, Butternut Squash, Yam, Carrots washed, slightly peeled then quartered
2 tbs. Tapioca Powder
1 tsp Apple Cider Vinegar
Lemon Juice
Parmela Sharp Cheddar Nutcheeze

Macaroni

Roast the veggies on 450 for approximately 30 minutes, tossing with EVOO, and a splash of water to cook faster.
Add all the ingredients and blend with hand blender, combine with cooked macaroni. Loved this. Had to try this new cheeze out and added it it was perfect, around 1/4 cup.

Would serve with a side of sautéed greens, a large mixed vegetable salad with some roasted pumpkin seeds for a great protein boost.

Garnish with Urfa Pepper/Marash
