Easy Spring Chickpea Salad with Artichokes and Blueberries

1 jar Jovial Chickpeas, lighlty sauté
3-4 Jarred Artichokes quartered
1/2 Avocado sliced
Blueberries
1/4 Red Pepper diced

Dressing:
Sherry Vinegar
Shallot
Salt
EVOO

On a platter, cover bottom with Vinegar, diced shallot, salt, Olive Oil. Toss with Chickpeas all the vegetables.

Garnish with Fresh Chives, and Parsley.

It’s packed full of nutrition, easy to make, and the blueberries added a great flavor. You can do anything with Chickpeas! If you can find the Jovial they are Pressure Cooked, easy and a whole-food packed with protein and nutritients. Spring is the great time for fresh herbed salads. Enjoy!
