Electric Blood Orange Chia Pudding

1 Blood Orange sliced on Mandolin/or good knife

1 Homemade Almond Milk  ~~
Soak 1 cup Almonds Overnight
Drain in morning and rinse, add to Vitamix Blender with 3 cups of water, 1 Date pitted, pinch of salt and vanilla powder, blend and squeeze through nut milk bag.

1/2 Cup Chia Seeds
2 cups Nut Milk/Plant-based milk
1 teaspoon Vanilla Extract
Maple Syrup if desired sweetener

Place in bowl and whisk together the chia seeds and plant milk, vanilla extract and sweetener, add to decorative pretty glass or mason jar refrigerate overnight or at least 4 hours.

*For this decorative piece you add a small amount and refrigerate for at least an hour to gel, then add the fruit along the sides and do another layer to set in the refrigerator, repeat, you may find when making a decorative piece you use more product and this had to be photoshopped as the layer of almond milk was getting into the front of fruit.  Photographing the food is the hardest part to me!  🙂

For real Chia Pudding let set overnight in refrigerator or at least for 20 minutes if rushing, it won’t be as gel set if you do it at a shorter time, but if your in a hurry it works and is still flavorful.   I’m not one for sweetener because I use fruit as the sweetener, so maple syrup or coconut sugar if you desire.  Or if you don’t like the texture which is similar to Tapioca pudding, you can always blend it too.  Personally I love this pudding and could eat every morning! The blood oranges are so beautiful and tasty too, squeeze the juice into the chia pudding for added flavor!
