1 Bunch Beets quartered
Rallis Olive Oil
Tangerine Juice
Apple Cider Vinegar
Zest of Tangerine, Lemon

Peel, wash and chop beets, you can actually leave peels on and peel after if desired.
Preheat oven to 400 degrees. In roasting pan a splash of water, Maldon salt and EVOO. Spread and roast for approximately 30 minutes. Slice to check for doneness.

In a small bowl, combine tangerine juice, 1 Tbs Olive Oil, 2 tsp Apple Cider Vinegar, Maldon Salt, add the beets and toss.

Garnish: Violife Black Garlic Vegan Cheese, Flower, Orange or Tangerine and Lemon Zest.

Simply elegant beets to have anytime. The vegan cheese and zest are keys, I also added some wild arugula from the garden.
