2 Large Sliced Organic Carrots

1 Container Organic Hummus
Garnish, Sweet Peas, Tomatoes, Pistachios, Malton Sea Salt
Boil 1 &/14 cup water, add 1/2 tbs.

pinch of salt, bring to a boil and simmer on low for approx 30 minutes, check at 25 minutes.
Add Miyoko’s vegan butter to the rice, Plate with Hummus, and veggies and you have an amazing quick whole-foods plant-based meal. After being vegan for sometime now you begin to find amazing products like this brand of *Superfoods. The rice should be find without the flavoring, Miyoko’s butter hit it on the mark anyway.
The organic hummus is homemade from a local health food store and is amazing! I’m not a great hummus maker, so this makes it perfect to have on hand. Hope you give this easy dish a try, I loved the crunch of the perfect carrots and red peppers and sweet peas and tomatoes blended with the hummus and rice. Enjoy!
