GO GO Salad with Goji Berry Red Pepper Dressing

Romaine Baby Lettuces
Persian Cucumber
Golden Berries
Cherry Tomatoes halved
Radish sliced
1/4 Red Bell Pepper Sliced
1 Carrot peeled
1 Cup Raw Pumpkin Seeds
Garnish: Mint or Cilantro diced, Ginger Kimchee, Sprouts


1/2 Avocado
1 Red Bell Pepper
1 Lemon juiced
1 Tbs. Goji Berries
Nutritional Yeast
2 Cloves Garlic diced
1 Cara Orange juiced

Combine ingredients and blend well, add water for consistency you’d like. This dressing was superb for those that crave a dinner salad and don’t use oils. Personally I find Raw Olive Oil is a beauty food, using it raw and not cooked. But this dressing is high in Vitamin C, and Goji berries are a superfood high in Vitamins A, C, known for great eye health and strengthening liver and kidney.
