Inspired by the holiday in India. Wishing all my friends from India a Happy Holi!
BLACK BEANS
1/2 Red Onion diced
4 Cloves Garlic minced
2 Cans Black Beans
1/2 Tbs. Cumin
1/4 Tbs. Coriander
Chile Powder
In iron skillet sauté the coriander, cumin and mash with mortar. Add to beans, stirring in flavors. Let the beans simmer for 10 minutes.
BLACK RICE
2 Cups Water
1 Cup Black Rice Rinsed and drained
Boil water, add rice. Cook for approximately 15 to 20 minutes.
PINEAPPPLE SALSA
1/4 Pineapple Diced
1 carton of Cherry Tomatoes
2 Roma Tomatoes
1/2 Jalapeño diced
Red Onion diced
Cilantro
Lime
EVOO/Salt
GUACAMOLE
6 Avocados
1 Lime Juice
2 tbs. Cilantro
2 tbs. Red Onion diced
Salt
2 Tbs. Pineapple diced
Turmeric
Garnish: Roll into Chapati bread and add Mango Chutney, flowers. So delicious!
Very easy to eye the amounts once you add the avocado to bowl.
Splatter plate with Rose Powder, Turmeric, Chili Powder. Layer with the beans, rice and serve with the sides. You can roll into a Chapati bread and serve with Chutney. India Mexican Fusion.
