


1 cup Coconut Sugar
1 cup Melted Butter; 2 sticks Earth Balance Vegan Butter
2 Vegan Eggs brand *Neat Egg
1 tsp Vanilla Extract
2 Cups All-Purpose Flour
1 tsp Moonjuice Probiotics and Maca Powder*
1 tsp Baking Soda
4 ripe Bananas/ mashed
Cinnamon Swirl
2 tbs. Cinnamon
2 tbs. Runamook Maple Syrup
2 tbs. Vegan Butter
Preheat oven to 350 degrees. Lightly grease loaf pan.
Mix the butter, sugar, vegan egg substitute, and vanilla.
Stir in flour and baking soda. Fold in mashed bananas until well combined.
Layer bottom with half mixture, add the cinnamon swirl, layer again and top with cinnamon swirl, and sliced banana. Bake for 1 hour.
Serve warm with melted Miyoko’s vegan butter. SO GOOD!
My daughter, Katrina, was visiting from LA and made Banana Swirl Muffins from her own secret recipe. She gave me this recipe to veganize from “Bake with Mama” Pinterest and so I veganized it. I’m not a baker, and rarely bake , I’ve just never really had that big of a sweet taste, -only for Dark vegan Chocolates!
