Katrina’s Tofu Dip

1 Large package of Wildwood Tofu
1 very large Onion sliced
6 cloves garlic diced
1 tsp. dried sage, oregano, thyme, basil, rosemary minced
1/2 cup white miso
1/4 cup vermouth or white wine
EVOO, salt

Saute onion slices in olive oil, stirring frequently add all the herbs, garlic after 3 minutes. Saute until lightly browned, approximately 15 minutes. Add wine and reduce. Let cool in separate bowl.

In separate bowl break up tofu with your hands and massage in the miso. Add the tofu mixture with the onions and blend in food processor. Add 1/4 cup Olive Oil to desired smooth consistency and salt to taste.

Serve as a spread on Garlic Bread as a great addition to Pasta dishes. Serve separately as a dip with raw veggies for entertaining. Add to Marinara Sauce as added protein. So delicious! My daughter, Katrina’s favorite!
