Morocco Chickpea Stew Polenta Bowl

Chickpea Stew

2 jars Jovial Chickpeas

2 Cloves of Garlic minced

Diced Shallot

1 jar 18 oz Jovial Whole Peeled Tomatoes

1 tbs. Cumin, Coriander blend toasted

Fresh Thyme, Parsley

Sauté shallot, 2 cloves garlic minced in EVOO, add tomatoes diced, sauté stirring frequently on medium heat. Toast the cumin and coriander in a small iron pan until lightly brown and fragrant and mash with mortar. Add the cumin mixture along with thyme and parsley, sauté adding water as needed make sure you add enough water to use as a sauce. Sauté for approximately 20 minutes on low to medium heat.

PURPLE SWEET POTATO

Bake at 450 degrees for approx 30 -45 minutes, slice to check for doneness. Mash in a bowl and add Miyoko’s vegan butter.

MAITAKE MUSHROOMS

Sauté until lightly browned, adding fresh thyme and salt.

BROCCOLI

Wash and chop length wise, heat pan with EVOO, garlic, sauté the broccoli adding splash of water to steam and cover until light green, add lemon juice and salt.

ROASTED GARLIC

Preheat oven to 400 degrees, set the head of garlic in small baking dish and bake topped with EVOO for approximately 30 minutes.

POLENTA

Cook 1 cup Polenta, actually used the leftovers from my breakfast recipe and added 1/2 cup soy milk to make it creamier.

In the bowl, arrange with polenta on the bottom, pour the Chickpea Stew over the top with juices this is why you want add water to the stew so you have enough juice. Arrange with vegetables and toasted garlic bread and roasted garlic. Garnish with parsley.   #organicvegan


GARLIC BREAD

Slice bread and heat iron pan with EVOO and spread and coat bottom, add garlic let heat and add the slices turning until golden browned. Serve with the roasted garlic on top.

This was such an amazingly delicious and easy to make bowl, you can start with roasted the potatoes, and prepping everything. It’s certainly worth the time to prepare a whole-foods plant-based diet.
