
BLACK-EYED PEAS
1 package Black-Eyed Peas
Fresh Thyme Sprigs
1 Bay Leaf
Salt
Soak Peas overnight preferably.
Drain and add to a pot of water (veggie stock cube)* and bring to a boil, reduce add Bay leaf, Fresh Thyme sprigs, reduce and simmer for approximately 30- 45 minutes. Stirring occasionally. Test at 30 minutes, do not let them over cook. You want the beans whole.
*I didn’t use one, but it’s doable!
WILD RICE
Bring 3 cups water to a boil, add 1 cup wild rice and bring to a gentle boil, covered for approximately 30- 40 minutes, check for doneness. Crunchy but cooked, not mushy! Add EVOO, salt.
BROCCOLINI
1 bunch Broccolini chopped
EVOO
Salt
Red Pepper Flakes
Sauté the broccolini in a cast iron skillet, add a splash of water, and cover for 2 minutes, taste for doneness, add lemon, salt, EVOO, and red pepper flakes. The taste this season has been superb!
