6 cups Heirloom Tomatoes *measured in Vitamix
1 Cucumber
4 Basil Leaves
1 Lemon
1/4 tsp Salt
1 Clove Garlic diced
1 Avocado
Blend all ingredients in Vitamix or blender
Top with
Diced Cucumber, Yellow and Red Bell Pepper, Herbs diced Basil, Tarragon, Chives Avocado Diced
Gazpacho is a Spanish Dish but love the Italian flavors of this Gazpacho, and it is quite filling! You could serve 4 people in medium bowls. This is so delicious, think I will make it again this weekend! My favorite summer dish! Also from my garden beautiful Nasturtium and Marigold Flowers brings beauty to any dish.
