Raw Cauliflower Tabbouleh

*Organic always

1 Head Cauliflower, washed, dried, and shredded

1-2 bunch of mint leaves finely diced

Handful of Cilantro finely diced

1/2 Bunch Parsley finely diced

2 Red Spring Onions finely diced

1/2 Red Pepper finely diced

1 garlic clove minced

DRESSING:

1/4 Cup EVOO

1/2 Lemon Juiced

1/4 tsp Cumin Powder

Pink Sea Salt to taste

Mix all ingredients together.  Let the flavors merry in the refrigerator for 3 hours before serving.  My friend Billy was in town and he made the killer hummus, served this with hummus, tomato/cucumber/olives salad, Red Wine Mustard Vinegar Romaine Salad and tabbouleh, we were all ecstatic over this entire meal, even my teenager son loved the tabbouleh!  Enjoy!
