Summer Al Fresco of Pasta Pesto Broccoli Salad, White Bean and Wild Rice Salads


2-3 cans Organic White Beans
1/2 Shallot diced/2 cloves garlic minced
White Balsamic Vinegar
Fresh Herbs, Thyme, Chives, Parsley
2-3 Heirloom Tomatoes Sliced
Olive Tapenade

Drain and rinse the beans, put the garlic and shallot in the bottom of a shallow pan, add balsamic, salt, herbs and stir, add EVOO. Let flavors merry for at least an hour.
Spread the bean mixture on to the tomatoes and layer with tapenade and Harissa which has a great spicy kick to it

1 Package Pasta
1 Bunch Broccoli
1 jar Organic Pesto
1 clove minced garlic

Cook the pasta, add to serving dish and mix in the garlic, salt and pesto. Chop the broccoli and steam lightly, quickly add to a bowl of ice water to blanch, and drain, pat dry. It should be a light green and still a little crunchy. Add all ingredients and blend and serve.

2 cups wild rice
Red Cabbage minced chop
1 Clove Garlic Minced
1/4 Red Bell Pepper diced
White Balsamic Vinegar
Watermelon Radish sliced for garnish

Try sprouting and rinsing twice a day for 3-4 days, or just cook the rice, it seemed to not sprout after all that time maybe 2 cups was too much, so had to cook just a little to soften it. Or just cook the rice rather than sprout at all. Add the garlic, balsamic, salt, mix then add EVOO and blend the rice into the mixture. Add the cabbage, bell pepper and blend all the ingredients. Let merry for at least an hour. Add the garnish and serve.
