Summer Curry Avocado Corn Soup

3 Ears Corn shaved

1/2 Avocado

1 Red Bell Pepper

1 Bunch Cilantro

5 oz can Coconut Milk

Coconut Water to thin

Fresh Chives

Garlic

Malton Salt

Curry Powder

Blend and garnish with fresh herbs, and EVOO.  Rallis Raw Freeze Pressed EVOO of course!

Blending soups in the summer are nutritious and an easy way to get a variety of veggies in.  Eat the rainbow should be your motto!

Cilantro is great to remove heavy metals and toxins from your body, and always a must in your green juices for Cilantro is a great antioxidant that includes anticancer effects and skin health from the Vitamin A.  Avocados contain Potassium, Vitamins B5, B6, C, E K, Folate to name a few!  Am currently challenging myself to eat half an Avocado a day for my skin, you will see the difference!   Glow and Enjoy!
