4 cups Organic Black Beans soaked overnight
1 Tbs. Coriander Seeds/Cumin Seeds browned in skillet and crush with mortar
Rancho Gordo Chili Seasoning approx 1 tbs.
2 packages Follow Your Heart Cheddar Cheese
1 tub Follow Your Heart Sour Cream
1 Good Earth Guacamole
Garlic
Salt
1 package Primavera Thick Tortilla Chips
Jalapeño sliced
Romaine lettuce washed, shredded
Cherry Tomato Salsa*
1 Lime
Dust with Chives, Jalapeño, Shredded Romaine, Black Olives, Lime juice
Drain and rinse beans, boil and reduce to simmer, partial cover with a lid, skimming off excess foam. Add salt, spices, Simmer for approximately 30-45 minutes or longer, check frequently for tenderness. Drain most and put into separate bowl. Ad

Dice tomatoes
Add:
4 cloves Garlic
Cilantro (handful) diced
1/2 Jalapeño diced
Lime Juice
Salt
Combine and let the flavors merry.
CHEEZE SAUCE
Melt in separate pan
LAYERING
Layer your casserole pan with the thick chips, warm black beans, hot cheese sauce, layer on the salsa, repeat until you reach the top. Add the sour cream and guacamole in the center and layer the outside with chips. Garnish with lettuce, salsa, olives, chives and edible flowers and a squeeze of lime.
So scrumptious! Love it when I make the time to make beans from scratch because it really brings the flavor out. I drop brand names like the Rancho Gordo Chili and chips because sometimes they make a huge difference in taste! With the thick chips and loved the melt and taste of Follow your Heart cheese, it worked all so well together.
