Vegan French Cassoulet

Vegan CassouletSoak Rancho Gordo Cassoulet Beans overnight ~16 oz. White Runner Bean
Rinse and drain and cook for approximately 1 hour, taste for doneness
6 Cloves Garlic
4 Carrots peeled and diced
3 Leeks white parts only diced
1 bunch of Red Kale diced
1 package Tofurky Kielbasa Sausage Browned
5 sliced Whole Wheat loaf baquette sauteed in Iron pan with Olive Oil and Garlic

While beans cook, sauté 5 cloves garlic, carrots and leeks
Cook Kale separately in 1 Clove Garlic & Olive Oil, 3-4 minutes add water as necessary to steam, squeeze with lemon
Drain some water off of beans, add all veggies to beans, Put into Le Creuset pan, add chopped sausage and stir let flavor immerse for 1/2 hour without overcooking beans, top with bread crumbs and serve.
Top with bread crumbs and serve.
