Vegan French Lentil Soup with Greens

2 Cups Lentils Soaked for at least 2 hours*
6 – 7 Cups Veggie Broth or water
1 Large Onion diced
4 Large Cloves Garlic
1 Red Pepper
1 Large Carrot diced
Handful of your favorite Wild Mushrooms chopped finely
1 Tsp Ground Cumin
Bay Leaves
Parsley Branches and Cilantro tied together
4 Cups of Kale, Chard diced finely
Pink Salt

Drain the soaked lentils. Put them in with the veggie broth. 1 tsp. Salt, 2 Bay Leaves, and the Parsley and Cilantro bundle. Bring to a boil, then lower the heat and simmer,covered, until tender approx. 25 minutes.* Taste to make sure they are firm but done.

While lentils are cooking heat Oil in an Iron Skillet. Add the Onion and cumin stirring frequently until it starts to brown 15 minutes. Add the mushrooms until browned, add carrots and red peppers sauté around another 7 minutes. Add to the simmering lentils.

Serve with the Raw Greens on top, or you can add them 5 minutes before the soup is done. I prefer them raw. Add a squeeze of Lemon Juice to brighten the flavor. You also can top with Avocado or Vegan Yogurt!

This soup was delicious! Even more so the second day, some soups like to merry in flavor more. I always make enough to have for lunch or dinner the next day. Enjoy!
