Vegan Huevas Rancheros


2 packages Fillo’s Cuban Black Beans


1 pint Cherry Tomatoes

1/2 Shallot diced

1 Clove garlic diced

Handul Cilantro, Washed and diced

1 Jalapeno diced


Mix all the ingredients and let the flavors merry.


1/2 block Firm Tofu
1/2 Clove Garlic minced
Black Salt

Heat skillet, Sauté garlic, add tofu sliced double on diagonal and add to pan. Add Mirin to brown it up. Flip until browned on both sides, sprinkle with Black Salt.


Bitchin’ Cheese Sauce


Brown Tortillas on both sides, heat the beans in a pan, layer the tortilla:
Beans, Bitchin’ Sauce, Tofu, Salsa, and garnish with Avocado.

This is a filling protein rich, delicious breakfast. A rendition of a classic favorite. The Bitchin’ Cheese Sauce is spicy and perfect tasting for the cheese, have seen recipes that mimic it, if you can’t find it in your grocer; always check their websites for locales of where they sell it. These beans are my new favorite thing, packaged in no BPA foil for convience and already seasoned and ready to go, and they taste amazing! Non-gmo not fully organic, all my food is organic, but will suffice for these.
The black salt gives tofu that egg flavor, and can easily be found in specialty stores or online. These little tacos were juicy hot and delicious, and popped with vibrant color.
