Vegan New Years Caribbean Coconut Black Eyed Peas

2 cups Organic Kokuho Rose Heirloom Brown Rice  * Koda Farms

2 cups cooked Organic Black Eyed peas or 2 cans 15 oz cans  *Soaked overnight

1 can Organic Coconut Milk

2 Tbs. Cajun Spice Blend

1 Tbs. Cumin ground

1 Large Organic Onion

1/2 Tbs sea salt to taste

1/2 Large Jalapeño or green bell pepper

5 Cloves garlic

Soak overnight.  Cover and cook black eyed peas bringing to boil and then simmer for approx. 45 minutes. Don’t overcook.  Keep testing.  You don’t want them mushy!  Rinse rice and in a saucepan put in four cups water and bring to a boil, add the rice and cook approx. 20 minutes.  In an iron sauce pan, sauté in EVOO, Onion, Garlic, Jalapeño, and lightly brown.  Add the coconut milk and let the flavors merry stirring on medium heat add the Black eyed peas, salt and simmer on low for 15 to merry flavors.  Turn off and cover.  Serve with Chives on top.  Made Potato latkes and a Caesar Salad for this New Year’s Dinner and have to say it was one of our favorites!!  Enjoy! FullSizeRender FullSizeRender
