Vegan Orzo with Basil Pesto

1 Package Organic Brown Orzo

1 head Broccoli trimmed and sliced

Lemon Juice

1/4 tsp salt* or to taste

Make Orzo according to package instructions.  Drain and set aside.

While Orzo is cooking, in a cast iron pan, add EVOO and minced garlic, sauté garlic lightly, add in broccoli sauté until coated lightly add a little water add steam for approximately 4-5 minutes, taste for doneness.  Sprinkle with lemon juice.  Set aside.

Toss 1 jar of Organic Basil Pesto into Orzo, or recipe for Pesto is on this site.  Toss in broccoli and serve.

This was made for some friends for lunch visiting from Nevada, served with a simple side salad, and was very satisfying.  Add black olives, if you like a bit more salty olive taste.  Enjoy!
