Vegan Ravioli with Italian Sausage

2 packages of Kite Hill Ravioli * Spinach and Ricotta

1 package Field Roast Italian Sausage

2 jars Yellow Barn Biodynamic Arrabbiata Pasta Sauce

1/4 cup Parsley

4 cloves Garlic minced

1 Large Shallot

EVOO

Salt

Tomato Sauce~ heat cast iron pan with EVOO, add shallot and garlic, lightly brown, add tomato sauce, simmer on low, add parsley last 5 minutes. Add sausage to tomato sauce for more flavor.

Sausage ~ remove from casing and brown on all sides in EVOO.

Ravioli ~ cook according to package.

Pour tomato sauce over Ravioli and sausage, and serve.

There is nothing like great tasting ravioli that is vegan! And we all sometimes just like quick homemade meals that are satisfying and italian! My brother-in-law and his wife, told us the story of how they made some ravioli and we talking about how good it was, and realized two days later from the packaging it was vegan. So they bought regular ravioli the next time, and realized the vegan one was better! What they forgot is way less animal suffering, better for the environment and better for your health. There wasn’t a good time to interject, but loved hearing this.

The sausage, my friend who I recently influenced to eliminate meat. A big football player tough guy, who likes to call himself “Meatless Mike” now, made these sausages for his teenage daughter who is rebelling against his choice, and she had no idea it was vegan!! Ha ha! You have to laugh.
