Red Peppers/Purple Cabbage

Lettuce/Tomatoes/Avocado slices

Cilantro/Lime

White Corn Tortillas

The chili recipe is on this site, For Quinoa 3 cups water boil, add rinsed 1 cup Quinoa, bring to simmer and cover 10-15 minutes, remove from heat. Add salt to taste. Vegan Mexican Bowl

Saute in EVOO Tortillas.

All recipes are always organic.  My last teen at home, loves mexican food, so anyway I can get into the mix is great.  This is a beautiful way to get all your veggies, would even add a baked yam.  So so good!  Enjoy!
