1 Bag of Mixed Fingerling Potatoes
1/2 Onion diced
3 Cloves Garlic diced
1/2 Red Pepper diced
1 tbs. Turmeric
Dash of Paprika
EVOO
Salt/ Mixed Herbs (Thyme, Chives, Parsley for Garnish
Wash and scrub potatoes thoroughly, remove only dark spots, leave skins on
Put in large Iron Pan cover with water and bring to boil, let simmer covered for approximately 15 minutes
Add 1/4 tsp Pink Himalayan Salt while cooking/ Drain Potatoes
Add Extra Virgin Olive Oil (EVOO) Sauté Onion, Garlic,
Add potatoes and mash with masher
Continue Browning potatoes and turning adding more oil as needed
Add Red Pepper cook 5 minutes
Add Turmeric and stir in thoroughly
Garnish with Herbs and Paprika Enjoy!
