WILD MUSHROOM TOFU SCRAMBLE

1 Package of Wildwood Sprouted Firm Tofu
1/2 Onion
3 Cloves Garlic
EVOO
1 package Maitake Mushrooms chopped
1/2 Zucchini
1 Heirloom Tomato Diced
1/2 Red Bell Pepper Diced”Vegan Wild Mushroom
Garnish with diced herbs, Thyme, Chives, Parsley
1 Tbs. Turmeric
Whole Wheat Tortilla Wraps**

Prep all ingredients in prep bowls so much easier!
In separate pan put mushrooms and a little garlic sauté until browned Keep separate
Sauté Onion and garlic for 5 minutes
Add Tofu sauté until browned around 15 minutes, while cooking add in turmeric
Add Tomatoes cook a little, add Pepper and Zucchini sauté 5 minutes Add EVOO if needed
Add mushrooms and top with herbs

**Fold into Wrap or eat Gluten Free without wrap! Enjoy!
