1 Reine Vegan Gorgonzola Round
1 basket/pint of Cherry Tomatoes
4 -6 cloves Garlic
4-6 Medium Red Tomatoes quartered
1 tbs. dried Oregano
1 tsp. dried Basil
Organic Spinach handful

Preheat oven to 450 degrees. In baking pan add tomatoes, salt, EVOO, garlic, sprinkle in the herbs. Add the cheeses in middle. Bake for approximately 20 minutes. I browned a little with the roaster oven on top, just keep an eye on it, to keep it from burning in the Tik Tok it looks like it could be, but it certainly wasn’t in taste!

Have your pasta ready, drain and add in the tomato, spinach, vegan cheese mixture while both are warm. The warmth will cook the spinach perfectly.
Serve immediately.

Wow, using artisan vegan cheeses is really the way to go! I always have Miyoko’s on hand and would have definitely used hers but ran out.

Honestly wasn’t expecting this dish to be so good, but now I understand how it would go viral. The real viral should be vegan, because the taste of this pasta was supremely decadent, and I’m sure way less calories and saturated fat, and ZERO harm to baby goats and mamas!
